Khatta Meetha Baingan Aloo


This recipe is one of the hot favourites in my house.My husband loves this with his ghee paranthas and so does my little princess who is 18 months old.She loves to pick the potatoes and eat them.Hope you all would enjoy making ,cooking and eating this curry.

Ingredients:
Brinjals: 1/2 kg chopped lengthwise
Onions:2 Medium chopped into juliennes
Potatoes:2 Medium diced
Fenugreek Seeds(Methi/Menthulu):1tsp
Urad dal(Minnapa Pappu):1 tsp
Mustard Seeds:1 tsp
Red Chilli Powder:1.5 tsp
Garam Masala:1/2 tsp
Dhania Powder:1 tsp
Zeera: 1 tsp
Turmeric:1 tsp
Green Chillies: 2 slit
Salt: As per your taste
Oil: To cook
Amchur: 2 tsp
Jaggery(Gud/Bellam):2 or 3 small cubes
Coriander: To garnish

Method:
In a kadhai heat some oil.Put in mustard seeds.Let it splutter.Add urad dal, methi seeds,zeera,urad dal,green chillies and onions.Saute them till they are glassy.Add in the potatoes and then the brinjals.Add the turmeric,red chillie powder,garam masala,dhania powder.Let it cook for sometime till the potatoes are cooked.Now add salt and mix the curry.Let it cook on medium flame.Add the amchur and jaggery.Cook it for another 3 mins and take it off the flame.Garnish it with coriander and serve it hot with dal chawal or rotis.
